Carmine's first location opened August 14, 1990 on the Upper West Side of Manhattan. Designed by Peter Niemitz, the interiors of Carmine's evoke the images of the quintessential New York restaurant. Em abril de 1990, da “Farra Domingueira” de fazer moquecas para os amigos, surgia em Belo Horizonte o Badejo. Eram apenas 60 despretensiosos lugares e uma idéia: aproveitar o hábito do belorizontino de freqüentar as praias do Espírito Santo. Deu certo ! Em 1992, para atender a demanda e melhorar ainda mais a qualidade dos produtos, o Badejo montava em Ilhéus, na Bahia, uma central de compras e processamento de frutos do mar, que semanalmente envia aos restaurantes via aérea peixes e frutos do mar, mantendo sempre a qualidade dos produtos oferecidos. Em Junho de 1995 foi inaugurado o Badejo SP e, em setembro de 1996, a casa de Belo Horizonte mudava de endereço ficando maior, mais confortável e bonita. A moqueca - a moqueca tradicional do Espírito Santo é mais leve que a baiana, com seu caldo se faz o pirão, ambos os pratos em panela de barro pois do contrário não tem o sabor verdadeiro, que mantém por mais tempo o peixe aquecido. Ao invés do dendê usa-se o azeite doce (óleo de oliva). Panelas de barro - um dos segredos da moqueca capixaba é a panela em que ela é preparada. A tradicional panela de barro é confeccionada através de uma técnica popular que veio para o Espírito Santo há mais de 400 anos. O segredo desta arte foi passada de geração em geração e perdura até hoje.
