In 1950, Restaurant Founder Harry Rosen together with Master baker, Eigel Peterson, created and produced what is now known as the World's Most Fabulous Cheesecake. The recipe has been part of the Rosen family for three generations. Since the beginning, only three men have supervised the cheesecake production at Junior's. Even today, to ensure quality and consistency of the cheescakes one man oversees the entire blending, mixing and baking process.

With its vintage American desserts and decor, customers often remark that walking into the Bakery is like taking a step back in time. In 2007, the original owner decided to pass her oven mitts to a new family she felt would maintain the integrity of what had become an iconic brand. And so, Steve Abrams, a veteran NYC restaurateur and consultant along with his wife and daughter, took over the Bakery. Since then they have slowly and thoughtfully expanded from one shop to six.

Hot & Crusty opened its first store in 1980 on 63rd and Second Ave. in Manhattan. Over the next couple of years, the company opened more stores, each time, building complete bakeries in its stores. In 1994 the company granted licenses for the use of the "Hot & Crusty" name. This proved very successful and in 1997, a new company Hot & Crusty Franchise Corp. was formed to franchise new stores. To this end, a central baking facility was acquired in which all bread dough's and pastries are made. In 1988, equipped with little more than an apartment-sized oven and a strong desire to end her career in the hotel business, Cynthia Bruce Kramer started to bake her way into the cookie business, creating her own original recipes. Among her creations: chocolate truffles, key limes, and mint juleps. Her customers were friends and family.
