Born in St Angelo dei Lombardi in the Italian province of Avellino, Chef Sena came to attending New Utrecht High School in Brooklyn, Stefano studied culinary arts as an apprentice at the Alps Restaurant here on Staten Island under owner/chef Gerard Campitiello. Upon graduation from high school Stefano embarked on a 12-month regional Italian cuisine apprenticeship in Genoa, Italy after which he continued his education at the highly esteemed Culinary Institute of America (CIA).

Fifty feet from Carnegie Hall and near Central Park South and all midtown hotels, The Redeye Grill derives its name from the infamous late-night flight linking America's two cultural hubs. Talde is a Casual Asian-American Restaurant & Bar brought to you by Chef Dale Talde, David Massoni, and John Bush. The 65-seat restaurant offers guests a casual and comfortable, yet elevated, dining experience, showcasing Asian-American fare reflective of the distinct cultural and culinary experiences of Executive Chef/Partner Dale Talde. Setting the scene at TALDE is an impressive collection of Asian mahogany wood-carvings that Bush and Massoni salvaged from an antiques warehouse in Pennsylvania. Another focal point of the restaurant space is the 6-seat chef’s counter with views into the open kitchen, where guests can watch and interact with Chef Talde and his team as they work.

Delicately Quick Fried Soft Shell Crabs with a Scallion Beurre Blanc, Spicy Sofrito Potatoes and Sautéed Broccolini. Soft Shell Crab season can run from early March to as late as November. First of the season crabs come from Florida as the season makes it’s way up the East coast as ocean waters warm. We serve only fresh caught, never frozen, jumbo crabs hand picked daily by our Chef.

The name "Puglia" is a region in Southern Italy from which he immigrated. People came from far to indulge in the delicacies Gregorio prepared; Capuzzello (sheepshead), Tripe (the lining of the stomach of a young ox), and Pasta E Fagioli (pasta and beans), but what they loved the most was the way he treated everyone like his own family.
